Fruit & Oat Cookies

ingredients

  • 4oz(110g) medium oatmeal
  • 2oz (50g) wholemeal self-raising flour
  • Pinch bicarbonate of soda
  • 1 and half teaspoons mixed spice
  • 1 small piece grated fresh ginger, or 1 teaspoon ground ginger
  • 1oz (25g) brown sugar
  • 1 apple (peeled, cored and grated)
  • 2oz (50g) dried apricots (chopped)
  • 2oz (50g) raisins or sultanas
  • 2 table spoons (30mls) 100% apple juice
  • 1 egg (beaten)

method

  1. Pre-heat oven to gas mark 4/180`C/350`F
  2. Grease 2 baking sheets and dust very lightly with flour.
  3. Mix all the ingredients thoroughly in a large bowl. Add a little more apple juice if the mixture is too stiff, but don't let it get over sloppy.
  4. Using a tablespoon, drop spoonfuls of the mixture onto the baking sheets, leaving plenty of space between each cookie.
  5. Bake for 10-15 minutes or until golden brown.
  6. Remove from oven. Leave for 5 minutes before removing the cookies to a wire cooling rack.

Makes approximately 20 biscuits
